40 Day Meatless Journey – Year 2 12

Happy Monday! Hope everyone had a wonderful weekend. My weekend was oh so short and super busy as always. I saw someone posted on Instagram a quote that read “I wish there was a day between Saturday and Sunday.” Umm, can someone make that happen ASAP lol, I could so use that extra day right now. Saturday I went to Nellie’s Zumba class and had a blast as always. Sunday I spent the day visiting a sick relative.

 For anyone who celebrates Easter/lent, you know that we are currently in the midst of lent and I haven’t had a chance to share with you that I have once again given up meat for lent. This includes all poultry/beef/pork; it’s all fish and veggies for me. I did this last year as well and felt so good afterwards. I am not a big meat eater in general but I do eat chicken and turkey a lot. Pork and beef overall I try to limit. I’m even thinking about giving up meat for the rest of the year and try to go vegetarian, we will see how that goes. I have to remind myself to take baby steps.

Going meatless for 40 days has forced me to try new recipes and think of different things to eat and I wanted to share some of my latest favorite meals with you.

Gardein Meatless Meat with Veggies with rice                                                                                                                     This is a new favorite. I heard of this brand but never tried their products, I was a bit weary about this being filled with preservatives and other unnatural products and it’s NOT. I really liked this a lot and highly recommend it.

Cauliflower Mash                                                                                                                                                                                                I haven’t made this in a long time. I didn’t follow the recipe as I should have and it didn’t come out as good as I would’ve liked, but I will definitely make it again.
