40 Day Meatless Journey – Year 2

Mar 24

Happy Monday! Hope everyone had a wonderful weekend. My weekend was oh so short and super busy as always. I saw someone posted on Instagram a quote that read “I wish there was a day between Saturday and Sunday.” Umm, can someone make that happen ASAP lol, I could so use that extra day right now. Saturday I went to Nellie’s Zumba class and had a blast as always. Sunday I spent the day visiting a sick relative.

For anyone who celebrates Easter/lent, you know that we are currently in the midst of lent and I haven’t had a chance to share with you that I have once again given up meat for lent. This includes all poultry/beef/pork; it’s all fish and veggies for me. I did this last year as well and felt so good afterwards. I am not a big meat eater in general but I do eat chicken and turkey a lot. Pork and beef overall I try to limit. I’m even thinking about giving up meat for the rest of the year and try to go vegetarian, we will see how that goes. I have to remind myself to take baby steps.

Going meatless for 40 days has forced me to try new recipes and think of different things to eat and I wanted to share some of my latest favorite meals with you.

Gardein Meatless Meat with Veggies with rice                                                                                                                     This is a new favorite. I heard of this brand but never tried their products, I was a bit weary about this being filled with preservatives and other unnatural products and it’s NOT. I really liked this a lot and highly recommend it.

Quinoa with Tilapia Okra and Shrimp                                                                                                                                         I’m totally obsessed with quinoa now.

Salmon, Cauliflower and Southwestern Style Millet                                                                                                              The Little Beet shop is a new restaurant near my job and on days when I don’t bring lunch to work this is my go to. It’s Ah-MAZING. little beet shop

Salmon and Egg Salad Wrap                                                                                                                                                                           I made this for lunch one day after a super intense Saturday workout.

Spicy Seafood Soup                                                                                                                                                                                       This soup is from one of my favorite NYC restaurants, Blue Ribbon.

Cauliflower Mash                                                                                                                                                                                                I haven’t made this in a long time. I didn’t follow the recipe as I should have and it didn’t come out as good as I would’ve liked, but I will definitely make it again.

If you celebrate Easter and lent, did you give any bring up? If so, what and why?

  1. Salmon & Egg salad wrap? Sounds tasty. I need that in my life! We’re having Tilapia for din-din tonight.

    • it was so good..salmon, boiled egg, carrots and onions and a little Earth Balance mayo and mustard.. on gluten-free, rice wrap ;-) i love tilapia, so quick and easy to make

  2. Mm mmm mmm! I love some of the meat alternatives. And I love salmon + tilapia too.

  3. bah. I’m allergic to seafood and I am not a fan of the chicken. I do like my veggies tho?

  4. I celebrate Easter, but not lent …

  5. I love, love, love shrimp! Boo for allergies in my family hahaha! I love how you’re trying new recipes and learning a few new ones along the way. Also, how some of them will end up becoming staples! I haven’t shared my lent promise online either, but it has been praying the rosary every night!
