A few months ago, I launched “Cooking Chronicles”, a new feature on the site where I share some tasty recipes that I have tested or new ones that I created myself. I love to eat and I love to cook, so I’m always excited to share new ideas for healthy meals.
It’s been awhile since my last post and I have since tried several new recipes that I am excited to share with you.
Today’s recipe is courtesy of Kevin of Fit Men Cooks. A few months ago he posted a picture and quick video for his “Sweet Potato Lasagna”.
Now, I’m not a huge fan of traditional lasagna (something about the consistency of ricotta cheese just freaks me out) in addition to the fact that it’s super high-calorie. However, I was immediately salivating when Kevin posted a picture of his Sweet Potato Lasagna and I knew I had to give it a try.
One of the key differences with Kevin’s recipe vs a traditional lasagna recipe is that he replaces the actual pasta lasagna with sweet potatoes (which makes it so much healthier vs using regular lasagna).
You can find the original recipe here. I tweaked it a little bit (Kevin used cottage cheese, I did not but feel free to incorporate. I also added the peppers and garlic gloves for added flavor and I didn’t use mushrooms, tomatoes or eggs. I also added thyme.)
WHAT YOU NEED
- 2 small aluminum pans
- Ground meat of choice (I used lean ground turkey when i first made it). I also made a meatless version a few weeks ago utilizing (Gardein)
- 1.5c Organic pasta sauce
- ½ c onion chopped
- ½ c red peppers chopped
- 1-2 garlic cloves
- ½ c shredded cheese of choice (I used a cheese blend mix from Sargento)
- Seasoning of Choice (I used Flavor God’s Everything Seasoning)
- Pinch of fresh thyme
STEP 1: Sautee onions, red peppers and garlic in 1 tbsp of olive oil or cooking spray.
STEP 2: As the onion mixture gets soft and brown, add the meat to the pan with the onion mixture and stir until fully cooked.
STEP 3: Once the meat is fully cooked add about 1.5 to 2 cups of pasta sauce and seasoning of choice. Also add the thyme.
STEP 4: While meat is simmering , start slicing the sweet potato into a semi-thick circular shape and preheat your oven at 375 degrees.
STEP 5: Start layering the sweet potatoes into the smaller pans. Add layers of sweet potato, then a layer of meat sauce. Add another layer of sweet potatoes then meat sauce. Top with shredded cheese and bake in the oven for about 35-40 minutes
The result is a fantastic and I mean super tasty lasagna that’s half the calories of regular lasagna. My husband loves it, my four-year old, not so much, I LOVE it. It also reheats pretty well. Every time I have made this dish, I also bring some to work for lunch and I love it even more at work.
